Conceived by Remy Savage alongside Sara and Hadrien Moudoulaud, this compact cocktail bar plays out over two floors, turning every detail into a curated gesture. The marble-topped, crescent-shaped bar sits under mirrored ceilings and tulip-light fixtures—each design decision referencing the organic curves and floral motifs of Art Nouveau. The ground floor is luminous, intimate, and deliberate; the stairs lead to a darker, subterranean space with exposed brick, contrasting textures, and creative cocktail reinterpretations. Cocktail programs here celebrate both nostalgia and precision. A small menu of six rotating drinks (around €9–12) showcases historical French spirits like vintage vermouths while modern techniques—such as centrifugation—reanimate classics with unexpected twists. First impression? The Art Nouveau theme extends from the intricate, flower petal-inspired woodwork framing the glass doors and window to the speckled antique mirrored ceiling and tulip-shaped glass light fixtures suspended over the crescent-shaped marble counter. Everything from the fluted wood lining the centerpiece bar to the display of dusty old spirits bottles on the sole shelf hanging beneath the ceiling has an air of nostalgia. As you step into the intimate space, you'll feel transported to another era, a fantasy the team perpetuates through detailed, vintage-style uniforms adorned with an elegant, Art Nouveau flower broach. How’s the crowd? When I visited on New Year’s Eve, the ground floor space was packed with well-dressed couples and a mix of thirty- and forty-somethings who appreciate the art of a beautifully curated cocktail. Since there aren’t many stools and half of the narrow space is standing room only, it would be hard to fit more than 20 or so people inside. If you don’t want to wait in the line outside (the bar is first come, first served), you’ll have better luck finding a seat in the sultry downstairs space, whose mix of exposed brick and concrete with forest-like vines hanging overhead feels like it took a page out of Berlin’s rave-heavy playbook. While the parties of two upstairs file in and out quickly, the relaxed atmosphere underground makes you want to sit and stay a while sampling one (or a few) of the featured cocktails du moment. How are the drinks? With a superstar team helmed by legendary (and one of the world’s best) bartender Remy Savage, you know you’re in for an experience. Cocktails embrace elegant twists on classics and more unexpected flavor profiles that blend beautifully while nodding to the Art Nouveau theme, poured into a gorgeous selection of Bimini-style martini glasses and garnished with edible flowers. If there’s food, is it worth ordering something to eat? The emphasis here is all on the cocktails, but you don’t have to walk too far to find a great restaurant for food before or after—you’re in the heart of Le Marais, so dining options are practically endless. Did the staff do you right? The staff are pros and know how to work the space, quickly whisking in people filling each corner of the bar as expertly as a game of Tetris. Co-owner Sara Moudoulaud (formerly of Little Red Door, which continuously ranks on the list of The World’s 50 Best Bars) ran us through the menu’s six cocktails, elaborating on profiles and comparisons to classics like an Old Fashioned. Despite more intricate cocktail garnishes like gold leaf-covered ice cubes, drinks arrived in mere minutes and looked as carefully prepped as Michelin-starred plates. Wrap it up: what are we coming here for? Given its tourist-centric location and elaborate cocktail displays, this spot is a favorite for out-of-towners or if you’re looking to impress friends visiting. Time your visit earlier in the evening or make it your last stop of the night so you'll spend less time waiting in line and more time sipping some of the city's best cocktails. Passionate about the arts, Savage and the team built their bar around the famous Art Nouveau movement. The decor is meticulously crafted to transport guests to a bygone era. The bar is home to the world's largest private collection of antique Bimini glasses, and custom light fixtures echo the movement's embrace of natural forms. The space is split between two distinct levels: the ground floor reimagines an Art Nouveau bar from 130 years ago with a bright, airy feel, while the darker, more intimate downstairs area with its exposed brick brings a futuristic twist, exploring the relationship between nature and the post-technological world. This duality extends to the cocktail programme. The tightly curated menu of six cocktails is a masterclass in elegant simplicity, offering modern interpretations of classic drinks, including lesser-known French bistro classics. The upstairs menu focuses on pre-industrial techniques, while the downstairs menu utilises modern technology to create drinks with a different personality. This unique approach, combined with the bar's stunning aesthetic, has turned Bar Nouveau into an in-demand destination.
