Ce soir-là : thon rouge de ligne, viande d’Aubrac parfaitement saignante, œuf snacké au cœur coulant, broccolinis croquants… C’est précis, gourmand et joyeux. La carte des vins, futée avec ses 150 références, le service décontracté, les vinyles et la playlist rétro donnent envie de vite revenir !

Dame, 38 rue Condorcet, Paris 9 -- A Second Visit, This Time for Dinner
I had an outstanding lunch at Dame in late January and have been meaning to go back for dinner there, but that did not happen until last week when we went with friends. I can report back that dinner is every bit as good as that previous lunch. At dinner, you have a choice of ordering a dish for one, two, or four persons, and it is served family-style for the whole table. Addition, you have a choice of sauce to go with the main dishes, and can also order accompaniments. The wine list, as before, is excellent and attractively priced. The wines by the glass: With only three of us drinking, we each ordered by the glass. L began with a 2022 Muscadet-Sevèvre et Maine “L d’Or” from Luneau-Papin, one of the very finest Muscadet producers. The wine was crisp, fresh, and bracing, just the way an ideal Muscadet should be. I and one of my friends each took a glass of the 2022 Chignin-Bergeron Les Cerisiers from Fabien Trosset. This is a white wine from Savoie made from the Roussanne grape: The wine was clear and mineral with good penetration. It was less fat than the Chignin-Bergeron I have had from other producers, and I look forward to further exploration of Trosset’s wines. We started with the carpaccio of zucchini with the flowers stuffed with goat cheese: In addition, we also to the straciatella with piquillos pepper, sweet chili peppers, and pine nuts: Both were light, fresh, and delicious. For main courses, L took the starter rillettes of trout roe with fresh radish which came in a generous portion, easily able to do for a main course: It was as delicious as it looks. For her wine, she took the Chignin-Bergeron than two of us had had with our first course. Two of us took the dry-rubbed pork shoulder: and one person took the magret of duck: These both were very generous servings. The meats were tender and full of flavor. The friend who shared the pork with me and I took glasses of 2023 Domaine Hauvette “Roucas”, a wine from the Alpilles in Provence near Les Baux and Saint-Rémy de Provence: The wine was intense, elegant, and spicy with dark fruits, justifying Hauvette’s reputation as the best producer in the region. With the mains, we also took sides of excellent matchstick potatoes with cajun spices and grilled little gem lettuces, both outstanding: The portions were so generous, none of us had any room for dessert. We were among the first to arrive, but not long thereafter, the room was filled, entirely with French people, as far as I could tell, who looked as though they were residents of the prosperous surrounding neighborhood. The bill for four people: This was a flawless, delicious meal with excellent ingredients. As you can see, it is informal dining, but none the less for it. I look forward to many more meals at Dame.
